Ingredients

• 2 green plantains
• Vegetable oil for frying
• 1 cup seasoned beans (optional)
• 1 onion, diced
• 2 cloves garlic, minced
• 1 red pepper, diced
• 1 yellow pepper, diced
• 1 cup mushrooms, sliced
• 1/2 cup vegan parmesan cheese (optional)
• 1/2 teaspoon dried basil
• 1/2 teaspoon dried oregano
• 1/2 teaspoon parsley flakes
• 1 teaspoon sazon adobo
• 1 teaspoon creole seasoning
• Pepper to taste
• Banana peppers and jalapeno peppers (optional)
• Fresh cilantro and lime for garnish
• Garlic sauce, vegan sour cream, or salsa for dipping

Directions

1. Peel the green plantains and slice them into approximately 1-inch thick pieces. Soak in sea salt for 15 minutes.
2. Heat vegetable oil in a frying pan over medium heat, ensuring it reaches around 350°F (175°C).
3. Fry the plantain slices for about 3-5 minutes until golden brown. Remove and drain excess oil on paper towels.
4. Using the bottom of a glass or saucer, flatten each fried plantain slice until they’re about 1/2 inch thick.
5. Return the flattened tostones to the hot oil for a second fry to achieve crispiness, about 2-3 minutes. Drain again on paper towels.
6. Prepare the filling by sautéing onions and garlic until fragrant. Add peppers, mushrooms, beans, and seasonings. Cook until tender.
7. Preheat the oven to 375°F (190°C).
8. Place tostones on a nonstick baking sheet lined with parchment paper. Layer with cheese, filling, and another layer of cheese.
9. Bake for 10-12 minutes. In the final 5 minutes, sprinkle scallions on top.
10. Serve warm with dipping options.

Cook’s Notes

To keep tostones crispy, avoid overcrowding in the frying pan and consider frying in small batches. Fillings can be prepared ahead and stored in the refrigerator. Substitute any vegetables or use pre-cooked proteins for variation.
